Simply muddle the mint leaves with lime juice and simple syrup in a glass, add ice, top with soda water, and garnish with a sprig of fresh mint for an extra burst of freshness.

If you’re batching and you want to add a little alcohol then try a single measure of white rum for every three cocktails, this will put the ABV around 2% or 3% ABV.
